Coffee Cake Ring
From the recipe box of travel writer Carole Terwilliger Meyers.
Everyone loves this because it is delicious. To use up the leftover sour cream, I plan baked potatoes for dinner one night.
1 cup butter
1 cup sugar
Add and beat together.
1 cup sour cream
1 tsp. vanilla
Add and mix just to blend.
2 cups flour
pinch of salt
2 tsp. baking powder
Mix or sift together and mix in just to blend.
1 tsp. cinnamon
2 tsp. sugar
1 cup chopped walnuts or pecan or a mix of the two
Put 1/3 of first wet batter mix in greased and sugared bundt pan or angel food cake pan. Sprinkle with ¾ of cinnamon-sugar mix and the nuts. Add rest of batter, then sprinkle top with rest of cinnamon-sugar mix and nuts.
350 degrees for 45-55 minutes. Cool, then carefully remove by inverting on a plate.
